The way they are designed to fit, it's pretty snug. Over time it may become less snug, but the length of the dowel prevents it from backing out. The only chance of the door falling out is if you tilt the canopy forward, at a very steep angle (tested this myself at the shop).
This is the second canopy I have done like this and it works surprisingly well. The first one I built turned out kinda ugly (I goofed the stain job and it didn't match the other older canopy well) and then I built this system. The first one had shorter dowels and even then, the fit was very snug and secure.

A very good concern, but the doors aren't coming off easily.

Momma wouldn't let me use something that would leave a crater in his noggin!

And you would be exactly right

except that the plywood I used (standard 3/4" A-1 grade birch ply) is actually lighter than 3/4" particle board. The doors aren't really all that heavy, although it certainly wouldn't feel good to get bonked on the head.
And thanks for the comment on the corals! This is the nicest tank I've ever had. Diligence is the key. I keep up with skimmer cleaning (you have NO choice but to clean a Coralife Super Skimmer every few days, lol) and dosing small amounts of Vitamin C twice a day.
I also just started dosing Microbacter7 yesterday. We'll see if it helps.
